Most storage advice for café syrups is written in Europe or North America, for a back-of-house that sits at 18–22°C. A Philippine café store room does not. Heat and humidity change how fast an opened bottle goes off, and they do not affect every product on your shelf equally.
Sugar is doing most of the preserving
Toschi's 1L syrups carry roughly 80–87g of sugar per 100ml. At that concentration there is very little free water available for anything to grow in, which is the main reason an unopened syrup is shelf-stable without refrigeration.
Sauces and toppings are a different proposition. They generally sit around 45–55g of sugar per 100g — substantially lower — and several of them contain dairy or egg. Those two facts together mean sauces deserve more care than syrups, not the same care.
The products on your shelf that need the most attention
Based on the manufacturer's published ingredient lists, these Toschi products contain dairy, egg or wine and should be treated as the most perishable things in the range once opened:
- Tiramisu Sauce 1KG — sweetened egg yolk 25%, Moscato wine, coffee
- Zabaione Toppings 900g — condensed milk, sweetened egg yolk, Moscato wine
- Caramel Sauce 2KG — cream and butter
- White Chocolate Sauce 2KG — sweetened condensed milk

The routine that actually prevents waste
- Date every bottle the moment it is opened. A marker line on the label beats memory, beats a spreadsheet, and takes two seconds. Without an open date, nobody on the team can make a judgement call about a half-used bottle.
- FIFO properly. New stock goes behind, not in front. A large 2KG or 2.5KG container is excellent value only if you finish it before it turns.
- Keep bottles off the machine. The warmest surface in most cafés is the top of the espresso machine, and it is exactly where syrup bottles end up because it is convenient. Move them.
- Out of direct sunlight. Light degrades colour and aroma in fruit syrups faster than anything else on this list, and a bottle behind glass in afternoon sun gets genuinely hot.
- Wipe and close the neck. Syrup left around the thread is a sugar source sitting in warm, humid air. It is the first place you will see mould.
- Refrigerate the dairy and egg products after opening. Of everything here this is the one that matters most.
- Keep the pump clean. A pump left in a bottle for months, in humidity, with dried syrup in the mechanism, is contaminating every drink it touches.
What to look for before you serve
Fermentation smell, fizzing, visible mould at the neck or on the surface, a sauce that has separated and will not come back together, or a fruit syrup that has darkened noticeably. Any of these and the bottle goes, regardless of what the date says.
The honest gap in this guide
Toschi does not publish an opened shelf-life figure for their syrups and sauces — only the best-before date on the unopened pack. We are not going to invent a number for you.
